This is a self directed event rather than a formal seated one. You will join us at the bar, get your glass, and float from importer to importer enjoying what they have to offer. You will then have the option to order any of your favourites!

Our incredible chef will then take this wine list and curate dishes that highlight what is going on in the wine, how the food is accentuated by the tannins and flavors, and how they interact with one another. It is going to be pretty amazing and we promise you will leave pleasantly full.

Your table will be our big raised chef's table right by the kitchen so you get a private viewing of what is going on while you enjoy this experience. We just want you to feel engaged and special.

To make this event as intimate as possible, there are only 4 seats available per seating. Tickets for the event are $125.00pp + tax. We encourage you to book as a party of 4, unless you are happy to share the table with others (gratuity is not included).

Gastro Fire Sage pop up, we are excited to have Chef Vijud (@gastrofiresage) join us for a 2 night pop up. Offering a small but carefully crafted menu. We will also have cocktails paired by the wonderful Amara (come_drink_with_me)

Chef Vijud (@gastrofiresage) was born in Madras and ancestrally from the Nilgiri rainforest. Went to chef school in India and has travelled the world gaining culinary knowledge along the way. Moved to Canada 5 years ago. His train of thought goes to how the cycle of nature affects our food, his brain is going to wild directions of how we think and look at food. Vijud has seen good success with his previous pop up and bring a unique perspective to the Calgary culinary scene. Embarking on a culinary journey with Vijud is not just a feast for the taste buds; it's a captivating odyssey through flavors, cultures, and the artistry of food. Red Mountain Wine w/ Red Meat Dinner

Join Alex Good of Spur Imports as he guides us through a delightful selection of wines from Kiona Vineyards Red Mountain Wines. This will be a 4 course pairing dinner with a menu created by Chef Randel and Chef Jake, using red meat supplied by The Meat Box

We will have several sitting times for this event starting at 5/530/6/630/7/730 and 8pm. Message or call to reserve your table, a 50% deposit will be required to hold your booking.

Few wineries in Washington state have contributed as much to their region, or the American wine industry, as the Williams family of Kiona Vineyards. In the early 1970s, John Williams was working as a metallurgist at General Electric, when he received a circular soliciting participation in various ad-hoc steering committees for local university programs. Among those listed was one for viticulture and enology research trials. An avid wine consumer, he applied, and was accepted. Williams’ father-in-law owned an eighty-acre parcel on Red Mountain, which at the time was a bare, dusty hill covered in sagebrush. There was no water, electricity, or road access. A road had to be built, and electricity brought over three miles to the site, but finding water in the eastern Washington desert is no small feat. Williams, an engineer, also understood geology. Over the various geological upheavals of the region, pockets of water deep in the rock layers on Red Mountain became trapped and could possibly be accessible by drilling. With what money he had, an old salt well digger was hired. Water was found 550 feet down. The rest is history. With the help of John’s son Scott and his high school buddies, the first vines on Red Mountain were planted in 1975:

Riesling, Chardonnay, and Cabernet Sauvignon. Those plantings were augmented by other varietals in subsequent years. It was quickly discovered that grapes from Red Mountain had special properties. The berries were small, concentrated, high in acid and rich in colour. The flavours were ripe and intense, and the structure translated into very age worthy wines of great concentration. In 1980, Kiona produced their first commercial vintage, releasing a Chenin Blanc and a Lemberger. 1982 saw Williams help found the Yakima Valley AVA, and later the Red Mountain AVA in 2001. Since the initial few planted acres in the 1970s, the Williams now own over 280 acres on Red Mountain. Today, the third generation is at the helm of Kiona. Tyler Williams, armed with a degree in biology and masters in enology, with winemaking experience in Bordeaux, Sicily, South Africa, Chile, New Zealand, Australia, and several top tier Washington producers helms the winemaking. His older brother JJ is the winery general manager, while their father, Scott, is the viticulturalist. The American wine industry owes much to the Williams family, for helping lead the way to establish one of the great AVAs in the United States.

Deep Dive Gin Cocktail Class

In the coming weeks and months our very own Amara will be hosting cocktail classes to help expand your confidence with cocktailing at home and ordering out on the town!

This series will take a look at some classic cocktails as well as creative ways to use classic spirits.

These events will run on Sundays near the end of each month from 3-5pm. You will lean how to make a shake 3 cocktails during each session!

May 19th - Tiki’s for days

Christmas Wine Fest

Join us for our 2rd Annual Christmas Wine Fest, this time we have included more importers as well as some spirit and sake importers. We will be doing 2 sittings 12:30-2:30 and 3:00-5:00.

We have collaborated with 6 wine importers, a Sake importer and a Spirit importer. This event has was such a success last year that we had to go bigger this year.

These importers will be pouring a handful of wines/spirits and sake for you to explore and learn about. This is a self directed event rather than a formal sit down event. You will join us at the bar, get your glass and some snacks then float from importer to importer enjoying what they have to offer.

You will then be able to purchase and order your favorite wines/spirits.

Chef Christopher Hyde is the Executive Chef at Lina's Italian Market in Calgary and creative mind behind their in-market restaurant Sapore. Christopher has a long history working in Edmonton as Head Chef at Uccellino & Bar Bricco as well as the pastaio at Corso32. Pasta Boy From Oz is Christopher's self-titled pasta project for pop-ups and collaborations throughout Canada.

Christopher grew up in Melbourne, Australia and has been working in restaurants since he was 12, Cafe Di Stasio, being one Melbourne restaurant definitely worth mentioning! He has also travelled and learned from restaurants all over the world such as Italy, London, New York, and San Fran.
To top all that off - he was
recently selected for Canada's Great Kitchen Party (gold medal plates Calgary) 2023!

This event consists of an antipasto, four home made pasta courses, and a dolci.

Chef Addie Takeover

On September 29 and 30, we are pleased to bring you Chef Addie - @bigaddie on Instagram. He will be taking over our kitchen with a very special menu.


Aditya (Addie) Raghavan is a traveling cook and cheese consultant who splits his time between India and Canada. Formerly a scientist with a PhD in theoretical physics, he left academia about 12 years ago to go and work on a cheese farm in rural Alberta. He went on to spend time in Italy and France learning to make traditional European cheeses and has also been a delegate at Slow Food International’s Cheese 2017 conference in Bra, Italy. 

In Canada, he has worked in several restaurants and food production spaces, and in various positions. His travels to India over the last ten years has inspired him to focus his skills on raising the bar of Indian food both in India and North America. He is extremely passionate about restructuring the western outlook on South Asian food. In 2023 itself he’s done several collaborative/popup experiences, the most significant being a collaboration dinner on Indian Dairy Traditions at Masque Restaurant in Mumbai, which currently is ranked as #16 in Asia and the best restaurant in India. 

Expect his menu to rely heavily on seasonal prairie ingredients but reimagined as fun Indian snacks meant to be shared with friends and enjoyed with wine.

Jenna and Dave @steelandvines will be curating a small wine list to pair with Chef Addie’s style of food and Amara @come_drink_with_me_ will be preparing a special cocktail menu for this event.

Chefs Table

Rather than a food with wine pairing, this is a wine with food pairing. The evening will consist of special hand picked, off menu wines that we are excited to be sharing. Our incredible chef will then take this wine list and curate dishes that highlight what is going on in the wine, how the food is accentuated by the tannins and flavors, and how they interact with one another. It is going to be pretty amazing and we promise you will leave pleasantly full.

Your table will be our big raised chef's table right by the kitchen so you get a private viewing of what is going on while you enjoy this experience. We just want you to feel engaged and special.

To make this event as intimate as possible, there are only 4 seats available per seating.
